I have recently installed a solar setup on my RV using a Renogy 40 MPPT controller. The install was fairly easy and, according to the green LEDs on my controller, everything is okay. I also installed a MT-5 monitor. Sometimes the monitor seems to work properly but mostly it just blinks and flashes, especially if the RV is plugged in to shore power or is the battery icon shows 75 precent or more "full".

Any ideas what might be happening here?

You show no errors on the controller? Your communications cord is not cut anywhere, from MPPT to remote.
