I'm getting reading to hookup my Renogy 1000watt inverter and I read where it needs to be grounded so my question is what is the best way, to the frame or can I just ground to the sheet metal in my 2016 Ford Transit?

I would think the frame would be your best place.....

Get under your frame and you will find several welded on studs where there are already ground cables, utilize one of these for best ground.
