I have 10-100W Renogy Mono Panels with 6-6v (12v) batteries Series-Parallel going to a 3000W Off-grid inverter.
How do I determine the best charge controller and panel setup for battery bank I have?
Should i go 12 or 24 volt on my panels?

you should go with the same voltage on your panels to match your batteries. In your case that would be 12v, provided you set them up in parallel pairs to equal 12v each. Go with 24v if you plan on making those larger parallel banks or 4 batteries run in series. In that case you'd need 8 batteries instead of 6. A Typical 100watt solar panel puts out just shy of 6Amps, so with 10 panels you will want to go with a 60 Amp charge controller. Consider going larger than that if you ever have any plans to expand your panel footprint.

Depending on the charger you pick, you can piggyback some, not all. Do your research, with that many panels I would seriously be looking into monitors as well, you didn't mention that.
