I have a Wanderer charge controller, which wants to be set for Deep Cycle Sealed, Gel, or Flooded battery. Which do I use for a lithium battery?

what is the voltage of the lithium, is just one cell or bunch of cells wired as a 12v or ?? gell or sealed ought to work for a '12v' bank but disconnect when full, don't float in storage.

no controller needed with the mc4 to dc adapter pictured in your link
be sure and unplug when fully charged as noted in manual.

I know the wiring exists to go straight from the panel to the battery, but my (very limited) understanding of the charge controller is that it would massage the energy coming from the panels to make a more suitable battery input. I'm hesitant to assume the battery has much logic along those lines. Is there not a danger that something could go wrong if the panel is supplying too much or too little at a given moment?
For a more concrete scenario, let's say I have some devices using the battery (a laptop running, a phone charging, a stereo, whatever), and I want to have the panels connected to continuously top off the battery. Should that be expected to work fine, even though the panels may be supplying either more or less energy than the devices are consuming at the same time?

Voltage. At some voltage lithum is considered full and charging should stop.
Solar matches battery voltage, as power is added to a batt it voltage rise as does solar, lithium should not be overcharged or have a maintenance charge all the time.
The wall wart puts out 15v and low amps so that if/when the batt gets full they want you to unplug.
if the battery never gets full cuz you are using more than solar can provide, then leave it connected.
That being said if you use a controller then find out what voltage the battery maker claims as safe.
A controller job is to limit overcharge but lithium does like to be floated as I understand.
